Having a clean extract system is just as important as completing your food supplies order.

 

Running a professional kitchen is a very stressful job; there are many daily tasks that have to be undertaken which is often why maintaining a healthy extract system is easily forced down the list of “tasks to be completed”. Unfortunately it is not a case of out of sight out of mind as too many building owners find out, all it takes is one fire to bring your business to a halt.

What the Law says:

“The Workplace (Health, Safety and Welfare) Regulations 1992 These Regulations require that employers provide effective and suitable ventilation in every enclosed workplace. This includes kitchens, which need ventilation to create a safe and comfortable working environment. Catering and cooking can produce significant amounts of fumes and vapours, as well as large amounts of heat. Mechanical extraction, via a canopy hood installed over the cooking appliances, can remove these fumes and vapour and discharge them to a safe location.”

 

Does your extract system need attention?

The local authority and fire inspectors will regularly visit commercial kitchens. Their aim is to check that all ventilation systems are adequately cleaned to meet the legal standards. They will look at the following to determine if the area is safe.

  • Does your fan make a noise or vibrate?
  • Are the fumes NOT being removed from the kitchen effectively?
  • Is the air movement causing a draught?
  • Does the environment feel hot? Is the extract system removing the hot air and replacing it with clean cool air?
  • Do you have ducting that you can’t access?
